Quick Green Bean, Tomato Salad
Late August is harvest time. Not only do green beans and tomatoes ripen together they taste great together. Here is a quick, tasty salad that never gets old.
Ingredients
1 pound of green beans
2 medium tomatoes or 12 cherry tomatoes halved
1/4 cup vinegar
1 tablespoon dijon mustard
pinch of sugar
salt and pepper to taste
Instructions
- Steam green beans until just tender. 
- Slice tor cube tomatoes. 
- Place vinegar, dijon mustard, salt, pepper and sugar in bowl and mix well. 
- Gently fold green beans and tomatoes into dressing. 
- Eat warm or cold. 
- Enjoy!
