Sun Loaf
This is the first of several loaf recipes. Add a salad and some steamed veggies for a great meal.
I have been making this loaf for years. I am not sure where it originated.
Ingredients
1 1/2 pounds firm tofu
1/3 cup olive oil
1 chopped onion
3/4 pound grated carrots
1/8 cup tamari sauce or shoyu
1 1/2 tablespoons dill
1/2 tablespoon Spike
1/2 tablespoon salt
1 tablespoon basil
1/4 teaspoon cayenne pepper
1/2 cup sunflower seeds
Instructions
- Preheat oven to 350 degrees 
- Food process, tofu. shoyu, oil and onion until creamy. 
- Transfer to bowl and stir in remaining ingredients. 
- Fill loaf pan. 
- Bake at 350 degrees for 35 minutes. Rotate baking dish and bake another 35 minutes, 
- Remove from oven. Cool for 10 minutes then serve.
